Shooting in the ‘Burgh! This looks awesome!
from Rachael Ray’s first 30 Minute Meals cookbook, which, really, is one of my desert island cookbooks. I love almost everything in it.
2 tbsp. balsamic vinegar
4 chicken breasts
2 tbsp. EVOO (twice around the pan)
1 large fennel bulb, ferns removed, halved and sliced thin
1 large yellow onion, halved and sliced lengthwise
14 oz. chicken broth
1/4 c. golden raisins
salt and pepper
Rub the balsamic vinegar into the chicken breasts to tenderize.
Heat a large skillet over medium high heat. Add the olive oil. Add chicken and cook 5 minutes on each side. When finished, remove to plate.
Add fennel and onion to pan. Cook until onion starts to caramelize, about 2-4 minutes. Add chicken back to pan. Add broth, raisins, parsley, salt and pepper. Heat through. Serve.
Outside my window…sunny, hot. It’s August in Ohio. 🙂 Band camp is probably this week for my alma mater. Poor kids.
I am thinking…about what I need to do for the move. Hitting high gear now, since I move next month!
I am thankful for…A/C, yesterday’s day of retreat (more on that at CPG later today).
From the kitchen…trying to use stuff up pre-move, so that means pasta, probably, since I have a lot of it, as well as a lot of sauce. Made a TJ’s run, so I made Frank’s Favorite Chicken from 30 MInute Meals. This one is more like 20 minutes! Recipe to follow.
I am wearing…a purple dress from Coldwater Creek, a St. Mary Magdalene medal, my ruby ring, which I always wear, brown sandals.
I am creating…now that I’ve got “Dido’s Lament” down, I want to learn something new.
I am hoping…for a productive packing week
In the CD player…Josh Groban CDs, since I’m going to see him in concert on Friday!

One of my favorite things….weekends spent with friends; tea; new books
. I am reading…Mistress of the Monarchy, a biography of Katherine Swynford; The Distant Hours, and read A Good Hard Look over the weekend, which was awesome, because it involved Flannery O’Connor as a character! Squee!
A few plans for the rest of the week…W: Cardiologist appt.; Thursday: 20s group; Friday: Josh concert!; Saturday: Possibly going to the Dublin Irish Festival, because, even though I have lived here all my life, I have never been to it.
